TMTT – Aunt Nikki’s Mac & Cheese

This week on Tempt My Tummy Tuesday, a cooking blog carnival hosted by Lisa at BlessedwithGrace, I will be sharing my Aunt Nikki’s Mac and Cheese Recipe. This recipe is soooo delicious that at every family dinner (a monthly occurance) she is ALWAYS asked to bring her mac and cheese.

Now when I think of making homemade mac and cheese I think of slaving in the kitchen for hours and hours – well that isn’t so with this recipe.

Aunt Nikki’s Mac & Cheese

2 c milk
2 Tbsp flour
2 tsp dry mustard
2 pkg Herb Ox brand chicken bouillon
1 lb extra sharp cheese – cubed (I use shredded cheese as it melts faster)
1 lb pasta

In a medium pan, mix together first 4 ingredients.  Whisk well to break up any lumps.  Place over low heat and stir often until the milk starts to thicken.  DO NOT let the milk boil.

Place a large pot of water on to boil for the pasta.

When the milk is hot, start placing a few cheese cubes (or dump some of the shredded cheese) at a time into the pot to melt.  You don’t want to put all the cheese into the pot at once or else it will cool down the milk and will take FOREVER. Just put some cheese into the milk mixture, whisking it until the cheese is melted and then repeat until all the cheese has been melted.

Drain the pasta.

Mix the cheese and pasta together in a 9×13 pan and bake at 350 for 20 to 30 minutes – this step is optional, we generally just eat it at this point. But if the rest of dinner isn’t ready quite yet, pop it in the oven.

You can also mix the cheese and pasta in the crockpot and turn on low for 1 to 2 hours.

Serve hot.

    Sounds like a yummy recipe! Wouldn’t that be perfect next to a nice slice of meatloaf? Talk about comfort food!
